In the early 1800s, after gaining independence from Spain, Mexico welcomed settlers into the region. But cultural and political conflicts soon escalated, leading to the Texas Revolution. In 1836, Texas declared its independence from Mexico and spent nearly a decade as a sovereign republic. It wasn’t until 1845 that Texas officially joined the United States.
This bold history forged a unique Texan identity—defined by independence, pride, and a deep connection to the land. Texans are known for their resilience, their confidence, and their loyalty to tradition. From its early days as a frontier to its role today as an economic and cultural powerhouse, Texas continues to influence the country with its size, spirit, and legacy.

Techniques brought by African American pitmasters, German and Czech immigrants, and Southern ranchers have all shaped the distinct BBQ traditions of Central, East, and South Texas.
Central Texas BBQ focuses on dry rubs and oak-smoked beef. East Texas tends toward sweeter sauces and pork, while South Texas blends in Mexican flavors and cooking styles, creating an unmatched regional variety. “Low and slow” is more than a technique here — it’s a way of life.
At the same time, Tex-Mex cuisine emerged along the borderlands, blending Northern Mexican ingredients and recipes with American tastes and techniques.
